Ingredients

  • 1 lb boneless, skinless chicken breasts, sliced into thin strips (or 2 cups shredded rotisserie chicken)
  • 1/2 cup natural creamy peanut butter
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • Juice of 1 large lime
  • 2 tbsp maple syrup or honey
  • 1 tbsp Sriracha or chili garlic sauce (adjust to taste)
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/2 head red cabbage, shredded
  • 2 carrots, julienned
  • 1 tsp toasted sesame oil
  • 4 large flour tortillas (burrito-sized)
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. If using raw chicken, slice breasts into thin strips. Heat a large skillet over medium-high heat with a splash of oil. Add chicken strips, season with salt and pepper, and cook for 5-7 minutes until golden brown and cooked through. Remove and set aside.
  2. Shred the red cabbage and julienne the carrots. Place them in a large bowl.
  3. In a small saucepan or microwave-safe bowl, combine peanut butter, soy sauce, lime juice, maple syrup, Sriracha, minced garlic, and grated ginger.
  4. Heat the sauce mixture over low heat on the stovetop, stirring constantly, or microwave in 30-second intervals until warm and pourable. Add a tablespoon of water if the sauce is too thick.
  5. Pour the warm peanut sauce over the chicken and vegetables in the large bowl. Toss until everything is evenly coated.
  6. Lay out tortillas on a clean surface. Spoon the chicken and vegetable mixture down the center of each tortilla.
  7. Top with fresh cilantro and roll tightly, folding in the sides. Slice in half diagonally and serve immediately.

Notes

For best results, let peanut butter come to room temperature before mixing. If meal prepping, store the sauce separately from the wrap components to prevent soggy tortillas. Warm tortillas slightly in the microwave or a dry pan to make them more pliable before rolling.
