Description

Ingredients

  • 2 to 3 lbs center-cut boneless pork loin roast
  • 1.5 lbs Yukon Gold or yellow potatoes, cut into 1-inch chunks
  • 1 large yellow onion, sliced into thick rings
  • 3 cloves fresh garlic, minced
  • 1 cup low-sodium beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 dried bay leaf
  • 2 tablespoons unsalted butter
  • Kosher salt and freshly cracked black pepper, to taste

Instructions

  1. Peel and slice potatoes into 1-inch chunks. Slice onion into thick rings and mince garlic.
  2. Place potato chunks in the bottom of a 6-quart slow cooker to act as a rack. Spread onion rings over potatoes and sprinkle minced garlic on top.
  3. Pat pork loin dry and season generously on all sides with salt and pepper. Optionally, sear the pork in a hot skillet for 2 minutes per side for a crust.
  4. In a small microwave-safe bowl, melt butter. Stir in Dijon mustard, Worcestershire sauce, and dried thyme until smooth.
  5. Place the seasoned pork loin on top of the potatoes. Pour the glaze over the pork to coat evenly. Pour beef broth around the sides of the pot and add the bay leaf.
  6. Cover and cook on LOW for 6 to 8 hours until the pork reaches an internal temperature of 145°F and shreds easily.
  7. Remove pork to a cutting board and let rest for 5 minutes. Remove bay leaf. Shred pork with two forks and return to the pot, tossing with potatoes and sauce. Serve warm.

Notes

For a thicker gravy, mix 1 teaspoon of cornstarch with water and stir in during the last 30 minutes of cooking. Ensure potatoes are cut evenly to prevent mushiness. Pork loin is lean, so do not cook on HIGH to avoid drying out. Leftovers can be frozen for up to 3 months.
