  • 1 pound flank steak or sirloin, sliced against the grain into thin strips
  • 2 cups broccoli florets
  • 1 large red bell pepper, cut into thin strips
  • 2 medium carrots, julienned or thinly sliced
  • 1 cup snap peas or snow peas
  • 34 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons soy sauce (divided)
  • 1 tablespoon dark soy sauce (optional)
  • 2 tablespoons oyster sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch (divided)
  • 1/4 cup water or beef broth
  • 2 tablespoons vegetable oil (divided)
  • 1/2 teaspoon white pepper

Instructions

  1. Place the flank steak in the freezer for 15-20 minutes to firm it up, then slice against the grain into thin, bite-sized strips.
  2. In a bowl, marinate the beef with 1 tablespoon soy sauce, 1 teaspoon cornstarch, and 1 teaspoon vegetable oil. Let sit for 15 minutes.
  3. Wash and chop all vegetables: cut broccoli into florets, slice bell pepper and carrots into matchsticks, and mince garlic and grate ginger.
  4. In a small bowl, whisk together 2 tablespoons soy sauce, oyster sauce, water or beef broth, white pepper, and 1 teaspoon cornstarch until dissolved.
  5. Heat a wok or large skillet over high heat until slightly smoking. Add 1 tablespoon vegetable oil and swirl to coat.
  6. Sear the beef in a single layer (cook in batches if necessary) for 1-2 minutes per side until browned. Remove beef and set aside.
  7. Add the remaining 1 tablespoon oil to the pan. Stir-fry carrots and broccoli for 2-3 minutes.
  8. Add bell peppers and snap peas, cooking for another 1-2 minutes until tender-crisp.
  9. Push veggies to the side, add garlic and ginger to the empty space, and cook for 30 seconds until fragrant. Stir to combine.
  10. Return beef to the pan, pour in the sauce mixture, and stir constantly for 1-2 minutes until the sauce thickens and coats everything.
  11. Remove from heat, drizzle with sesame oil, toss once, and serve immediately over rice or noodles.

Notes

Slice beef against the grain for maximum tenderness. Do not overcrowd the pan when searing beef to ensure a proper crust. Use high-heat oil like canola or avocado. For a gluten-free version, substitute soy sauce with tamari.
