Description
A crowd-pleasing dessert featuring a golden, buttery crackled crust over a soft, jammy strawberry center. This easy-to-make cake uses simple pantry ingredients like yellow cake mix and instant pudding for maximum flavor with minimal effort.
Ingredients
- 1 box (15.25 oz) yellow cake mix
- 1 small box (3.4 oz) instant vanilla pudding mix
- 3 large eggs, room temperature
- 1 cup (240ml) vegetable oil
- 2 cups fresh or frozen strawberries, sliced
- 1/2 cup (115g) unsalted butter, melted
- Powdered sugar, for dusting (optional)
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
- In a large bowl, combine cake mix, pudding mix, eggs, and vegetable oil. Beat on medium speed for 2 minutes until smooth and thick.
- Pour batter into the prepared dish and spread evenly.
- Slice strawberries into quarter-inch pieces and scatter them evenly over the batter without pressing them in.
- Melt the butter and pour it evenly over the entire surface of the cake.
- Bake for 45-50 minutes until the top is golden brown and crackled, and a toothpick inserted into the cake comes out clean.
- Cool in the pan for at least 20 minutes before slicing. Dust with powdered sugar if desired and serve warm or at room temperature.
Notes
Ensure eggs are at room temperature to prevent the batter from separating. If using frozen strawberries, do not thaw them completely to avoid a soggy cake. Cover edges with foil if they brown too quickly during baking. The cake tastes better the next day as flavors meld.
