Soft Yeast Hot Dog Buns

  • Author: caroline_hicks

Description

These homemade soft yeast hot dog buns are pillowy, slightly sweet, and incredibly easy to make. They feature a tender crumb and a shiny, professional crust achieved through a milk bath soak, making them superior to store-bought options.

Ingredients

Scale
  • 1 cup (240 ml) warm milk (around 110°F/43°C)
  • 2 ¼ teaspoons active dry yeast
  • 2 tablespoons sugar
  • 3 tablespoons unsalted butter, melted
  • 1 large egg, room temperature
  • 1 ½ teaspoons salt
  • 3 ½ to 4 cups (420-480g) bread flour
  • ¼ cup heavy cream or milk (for brushing)
  • Sesame seeds, optional for garnish

Instructions

  1. In a stand mixer bowl, combine warm milk, sugar, and yeast. Let sit for 5-10 minutes until foamy.
  2. Add melted butter, egg, and salt to the yeast mixture. Mix on low speed until combined.
  3. Add bread flour one cup at a time while mixing on low. Start with 3 ½ cups. The dough should be soft and slightly tacky but not sticky.
  4. Knead on medium-low speed for 5-7 minutes until smooth, elastic, and passes the windowpane test.
  5. Place dough in a greased bowl, cover, and let rise in a warm place for 1-1.5 hours until doubled in size.
  6. Punch down dough and divide into 8 equal pieces. Roll each into a 6-inch cylinder and pinch seams tightly.
  7. Place buns seam-side down on a parchment-lined baking sheet. Cover and let rise again for 30-45 minutes until puffy.
  8. Preheat oven to 375°F (190°C). Brush buns with heavy cream or milk and sprinkle with sesame seeds if desired.
  9. Bake for 15-18 minutes until golden brown and internal temperature reaches 190°F (88°C).
  10. Remove from oven and immediately brush tops with melted butter. Cool completely on a wire rack before slicing.

Notes

Ensure milk is not too hot (above 120°F) to avoid killing the yeast. Weigh flour for accuracy. If kitchen is cold, create a warm humid environment for the second rise. Do not slice warm buns as they will be gummy. These buns freeze well for up to 3 months.
