Ingredients
- 1 English cucumber (firm and straight)
- 8 oz full-fat cream cheese, softened to room temperature
- 1/4 cup fresh dill, finely chopped
- 2 tbsp red onion, finely minced
- 1 tbsp capers, drained and chopped
- 1 tsp fresh lemon juice
- 1/4 tsp white pepper (optional)
- Salt to taste
- 4–6 oz smoked salmon slices
- 2 tbsp fresh chives, finely snipped
Instructions
- Wash and dry the English cucumber. Slice into 1/4-inch thick rounds.
- Arrange cucumber slices on a baking sheet lined with parchment paper. Sprinkle lightly with salt and let sit for 10 minutes to draw out moisture.
- Pat the cucumber slices dry thoroughly with paper towels to ensure they remain crisp.
- In a small mixing bowl, combine the softened cream cheese, minced red onion, chopped dill, chopped capers, white pepper, and lemon juice. Mix until smooth.
- Taste the spread and adjust seasoning with salt and pepper if needed. Chill the spread in the refrigerator while preparing the salmon.
- Prepare the smoked salmon by tearing or cutting slices into pieces that fit nicely on top of the cucumber rounds.
- Spread a generous dollop (1-2 teaspoons) of the cream cheese mixture onto each cucumber slice using a small spoon or piping bag.
- Drape a piece of smoked salmon over the cream cheese on each bite.
- Garnish each bite with finely snipped fresh chives.
- Arrange on a serving platter and serve chilled immediately for best texture.

If using regular slicing cucumbers, scoop out the seeds before slicing to prevent sogginess. Ensure cream cheese is at room temperature for easier spreading. Do not freeze these bites as the cucumber will become mushy upon thawing. For best results, assemble just before serving to maintain crunch.
