Description

A tender, fall-apart beef chuck roast slow-cooked with deeply caramelized onions, red wine, and savory broth to create a rich, restaurant-quality French onion soup-inspired gravy.


Ingredients

  • 3 to 4-pound beef chuck roast (boneless preferred)
  • 4 to 5 large yellow onions, sliced into thin half-moons
  • 2 cups low-sodium beef broth
  • 1/2 cup dry red wine (Cabernet or Merlot)
  • 4 to 5 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • All-purpose flour (for dusting)
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 tablespoon soy sauce
  • 1 teaspoon Worcestershire sauce
  • Salt and black pepper, to taste
  • 1 tablespoon cornstarch mixed with 1 tablespoon cold water (optional, for thickening)

Instructions

  1. Peel and slice onions into thin half-moons.
  2. Melt 1 tablespoon butter in a large skillet over medium heat. Add half the onions and cook slowly for 20-25 minutes until golden brown and soft. Repeat with remaining butter and onions.
  3. Pat the chuck roast dry and season generously with salt and pepper. Dust lightly with flour, shaking off excess.
  4. Add remaining butter to the skillet and sear the roast on all sides for 2-3 minutes per side until browned.
  5. Add minced garlic to the pan in the last minute of searing, then remove beef.
  6. Place seared roast in a 6-quart slow cooker. Add beef broth, red wine, soy sauce, Worcestershire sauce, thyme, and bay leaves.
  7. Pour caramelized onions over the roast.
  8. Cover and cook on LOW for 8-9 hours or HIGH for 4-5 hours until meat shreds easily.
  9. Remove roast and bay leaves. If sauce is thin, stir in cornstarch slurry and cook on HIGH for 15-20 minutes to thicken.
  10. Slice or shred beef and serve with the onion gravy.

Notes

Do not skip searing the beef for the Maillard reaction. Ensure onions are deeply golden, not just soft, for maximum flavor. If using fresh thyme, add it in the last hour of cooking. The dish freezes well for up to 3 months.
