Ingredients
- 2 boneless, skinless chicken breasts
- 1 bag (approx. 1.5 lbs) baby potatoes (yellow or red), halved
- 1 packet (1 oz) dry ranch dressing mix
- 1 cup sharp cheddar cheese, freshly grated
- 1/2 cup full-fat sour cream
- 3–4 cloves garlic, minced
- 1/2 cup low-sodium chicken broth
Instructions
- Wash and pat dry the baby potatoes. Cut them in half (or quarters if large) to ensure even cooking.
- Rinse and pat dry the chicken breasts. If they are very thick, pound them slightly to even out the thickness.
- Place the halved potatoes in the bottom of a 4- to 6-quart slow cooker.
- Place the chicken breasts on top of the potatoes.
- In a small bowl, whisk together the sour cream, minced garlic, and chicken broth until smooth.
- Pour the sour cream mixture over the chicken and potatoes.
- Sprinkle the entire packet of dry ranch dressing mix evenly over the top.
- Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours.
- Check for doneness; potatoes should be tender when pierced with a fork.
- Remove the chicken from the slow cooker and set aside.
- Stir the grated cheddar cheese into the sauce in the slow cooker. The residual heat should melt the cheese. If needed, cover for 5 minutes to melt completely.
- Shred the chicken using two forks and return it to the pot, stirring gently to coat in the cheesy ranch sauce.
- Let the dish rest for 10 minutes before serving to allow the sauce to thicken.
- Serve hot, optionally garnished with fresh parsley.
