  • 2 boneless, skinless chicken breasts
  • 1 bag (approx. 1.5 lbs) baby potatoes (yellow or red), halved
  • 1 packet (1 oz) dry ranch dressing mix
  • 1 cup sharp cheddar cheese, freshly grated
  • 1/2 cup full-fat sour cream
  • 34 cloves garlic, minced
  • 1/2 cup low-sodium chicken broth

Instructions

  1. Wash and pat dry the baby potatoes. Cut them in half (or quarters if large) to ensure even cooking.
  2. Rinse and pat dry the chicken breasts. If they are very thick, pound them slightly to even out the thickness.
  3. Place the halved potatoes in the bottom of a 4- to 6-quart slow cooker.
  4. Place the chicken breasts on top of the potatoes.
  5. In a small bowl, whisk together the sour cream, minced garlic, and chicken broth until smooth.
  6. Pour the sour cream mixture over the chicken and potatoes.
  7. Sprinkle the entire packet of dry ranch dressing mix evenly over the top.
  8. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours.
  9. Check for doneness; potatoes should be tender when pierced with a fork.
  10. Remove the chicken from the slow cooker and set aside.
  11. Stir the grated cheddar cheese into the sauce in the slow cooker. The residual heat should melt the cheese. If needed, cover for 5 minutes to melt completely.
  12. Shred the chicken using two forks and return it to the pot, stirring gently to coat in the cheesy ranch sauce.
  13. Let the dish rest for 10 minutes before serving to allow the sauce to thicken.
  14. Serve hot, optionally garnished with fresh parsley.
