Instructions

  1. Trim large chunks of hard fat from the pork butt, leaving some fat cap for flavor. Pat the meat dry with paper towels.
  2. In a small bowl, mix smoked paprika, brown sugar, garlic powder, onion powder, chili powder, cumin, salt, and pepper to create the dry rub.
  3. Coat the pork generously with the rub, massaging it into all sides. Let it sit for 15 minutes.
  4. Heat a cast iron skillet over medium-high heat with oil. Sear the pork for 3-4 minutes per side until a dark brown crust forms.
  5. Transfer the seared pork to a 6-quart slow cooker.
  6. Pour in the apple cider vinegar. Dissolve the brown gravy base in water and pour it over the meat. Add enough water to cover half the pork.
  7. Cover and cook on low for 8 hours or on high for 5 hours, until the meat pulls apart easily.
  8. Remove the pork and let it rest for 10 minutes. Skim the fat from the cooking liquid.
  9. Shred the pork using two forks or meat claws, discarding bones and gristle.
  10. Return the shredded pork to the slow cooker and mix in the BBQ sauce and honey (if using).
  11. Let it heat through for 15 minutes to meld flavors. Taste and adjust seasoning. Serve on buns.
