  • Pinch of red pepper flakes
  • Kosher salt and freshly cracked black pepper
  • Optional vegetables: cherry tomatoes, asparagus, or baby potatoes

Instructions

  1. Preheat oven to 400°F (200°C). Line a large half-sheet pan with parchment paper or foil.
  2. In a small bowl, whisk together the juice of one lemon, zest of the other, minced garlic, olive oil, oregano, red pepper flakes, salt, and pepper to create the marinade.
  3. Pat pork chops dry with paper towels. Pour half the marinade over the chops, coating both sides, and let sit for 10-15 minutes.
