Pineapple Cucumber Agua Fresca: The Perfect Refreshing Summer Drink

  • Author: caroline_hicks
  • Total Time: 10 minutes
  • Yield: 4 servings 1x

Description

A bright, crisp, and hydrating summer drink made with fresh pineapple, cucumber, lime, and mint. This balanced beverage is quick to prepare and offers a refreshing alternative to heavy smoothies or sugary sodas.

Ingredients

Scale
  • 4 cups chopped fresh pineapple
  • 1 large English cucumber (peeled if thick-skinned)
  • Juice of 2–3 fresh limes
  • 2 tablespoons agave nectar or honey (adjust to taste)
  • 4–6 cups cold water
  • Small handful of fresh mint leaves
  • Ice for serving

Instructions

  1. Wash the pineapple and cucumber thoroughly. Remove the tough core from the pineapple and chop the flesh into chunks. Peel the cucumber if necessary and chop into rough pieces.
  2. Add pineapple chunks, cucumber pieces, and mint leaves to a blender. Pour in fresh lime juice and sweetener. Add 4 cups of cold water.
  3. Blend on low speed to break up fruit, then increase to high speed. Blend for 60-90 seconds until the mixture is completely smooth and uniformly green-gold.
  4. Optional: Pour the mixture through a fine-mesh strainer into a pitcher, pressing liquid out of the pulp. Discard pulp or compost it.
  5. Taste the agua fresca and adjust sweetness or tartness by adding more water or sweetener as needed.
  6. Pour over glasses filled with fresh ice. Garnish with cucumber slices or mint sprigs and serve immediately.

Notes

For best flavor, use fresh pineapple rather than canned. Chill ingredients beforehand or freeze pineapple chunks to keep the drink cold without dilution. The drink is best consumed within two hours of blending. If storing, keep in an airtight container in the refrigerator for up to 24 hours and stir well before serving.
