Description

A rich and indulgent slow-cooker pasta dish that captures the authentic flavors of a Philly cheesesteak with tender beef, savory vegetables, and a silky cheese sauce.


Ingredients

  • 1.5 lbs Lean Ground Beef (80/20 or 90/10)
  • 2 tbsp Unsalted Butter
  • 1 large Yellow Onion, diced
  • 1 medium Green Bell Pepper, diced
  • 3 cloves Garlic, minced
  • 1 cup Beef Broth (low-sodium)
  • 12 oz Uncooked Pasta (rotini, penne, or rigatoni)
  • 1/2 cup Heavy Cream
  • 8 oz Cream Cheese, cut into cubes
  • 1.5 cups Provolone Cheese, shredded
  • 1 cup Sharp Cheddar Cheese, shredded
  • Salt and Black Pepper to taste
  • 1 tsp Worcestershire Sauce (optional)

Instructions

  1. Heat butter in a large skillet over medium heat. Sauté diced onion and green bell pepper for 4-5 minutes until softened. Add minced garlic in the last minute.
  2. Push vegetables to the side and add ground beef to the skillet. Cook until no pink remains, breaking it up with a spoon. Drain excess grease if necessary, then transfer to the slow cooker.
  3. Pour beef broth and Worcestershire sauce into the slow cooker with the beef and vegetables. Add uncooked pasta and stir to ensure it is submerged.
  4. Cover and cook on Low for 4-5 hours. Do not use High heat to prevent mushy pasta.
  5. About 30 minutes before serving, stir in heavy cream and cubed cream cheese until mostly melted and incorporated.
  6. Remove lid and stir in shredded provolone and cheddar cheese. Use residual heat to melt. Adjust consistency with extra broth or cream if needed.
  7. Taste and adjust seasoning with black pepper. Serve immediately.

Notes

Shred your own cheese to avoid anti-caking agents that cause grainy sauces. Brown the beef first for better flavor. Check pasta at the 4-hour mark to ensure it doesn’t become mushy. This recipe does not freeze well due to the pasta and dairy.
