Ingredients

  • 3 medium ripe fresh peaches
  • 1/2 cup mid-shelf bourbon (e.g., Maker’s Mark or Woodford Reserve)
  • 4 salmon fillets (approx. 6 oz each)
  • 1 inch fresh ginger root, peeled and minced
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp raw honey
  • 2 cloves fresh garlic, minced
  • Pinch of red pepper flakes
  • 1 tbsp cold butter, cubed
  • Fresh cilantro or parsley for garnish
  • Olive oil
  • Salt and black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or grease a 9×13 inch baking dish.
  2. Pat salmon fillets dry and season generously with salt and black pepper.
  3. Blanch peaches in boiling water for 30-45 seconds, then transfer to ice water. Peel, pit, and chop into small chunks.
  4. In a medium saucepan over medium heat, sauté garlic and ginger in olive oil for 1 minute until fragrant.
  5. Add chopped peaches and cook for 2 minutes until softened.
  6. Carefully pour in bourbon and let bubble for 2 minutes to cook off alcohol.
  7. Add soy sauce, honey, and red pepper flakes. Reduce heat to low and simmer for 10-15 minutes until sauce thickens to a maple syrup consistency.
  8. Remove from heat and stir in cold butter cubes one at a time to emulsify.
  9. Place salmon in the baking dish and pour half the sauce over the top.
  10. Roast for 12-15 minutes until salmon flakes easily and reaches 145°F internally.
  11. Let salmon rest for 5 minutes. Plate and drizzle with reserved sauce. Garnish with herbs.

Notes

Ensure peaches are ripe but firm. Do not rush the sauce reduction; it should coat the back of a spoon. Salmon continues to cook after removal from the oven, so remove at 125°F for medium-rare or 145°F for well-done. Store leftovers separately in the fridge for up to 2 days.
