Instructions
- Preheat oven to 425°F (220°C).
- Separate chicken wings at the joints into drumettes and flats; discard tips or save for stock.
- Thoroughly pat wings dry with paper towels to remove all surface moisture.
- Place dried wings in a large bowl and sprinkle with baking powder and kosher salt.
- Toss vigorously until every wing is evenly coated in a fine, dusty layer.
- Arrange wings on a baking sheet or wire rack, ensuring they are not touching.
- Refrigerate wings uncovered for at least 30 minutes (or up to 24 hours) to air-dry the skin.
- Remove wings from fridge and let sit at room temperature for 10 minutes.
- Bake on the middle rack for 40-45 minutes. If not using a rack, flip halfway through.
- Wings are done when skin is golden brown, crispy, and internal temperature reaches 165°F (74°C).
- While wings bake, prepare chosen sauce by melting butter and mixing with sauce ingredients.
