  • 1.5 lbs (680g) 80/20 ground beef
  • 1 packet (1.75 oz) dry onion soup mix
  • 2 cups (480ml) low-sodium beef broth
  • 3 tablespoons unsalted butter
  • 2 medium yellow onions, sliced
  • 1/4 cup (60ml) whole milk
  • 1 large egg
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 2 cloves garlic, minced
  • Salt and black pepper to taste

Instructions

  1. In a medium bowl, gently combine ground beef, egg, milk, 1 teaspoon Worcestershire sauce, 1 teaspoon soy sauce, and half of the onion soup mix. Form into four equal patties, about 1/2 inch thick, and season lightly with black pepper.
  2. Heat 1 tablespoon of butter in a large cast-iron skillet over medium-high heat. Add sliced onions and a pinch of salt, cooking for 5 minutes until soft and golden. Remove onions and set aside.
  3. In the same skillet, add another tablespoon of butter. Brown the patties for 3-4 minutes on each side until a dark crust forms. Remove patties and set aside with the onions.
  4. Reduce heat to medium. Add remaining 1 tablespoon of butter to the skillet. Sprinkle flour over the fat and brown bits (fond), whisking for 1 minute to create a roux.
  5. Slowly pour in beef broth while whisking continuously. Add remaining onion soup mix, garlic, Worcestershire sauce, and soy sauce. Whisk until smooth and simmer for 2 minutes.
  6. Return patties and accumulated juices to the skillet, nestling them into the gravy. Top with sautéed onions. Cover and simmer on low heat for 5-7 minutes until patties reach 160°F (71°C).
  7. Remove lid, adjust seasoning with salt and pepper if needed, and serve hot with extra gravy spooned over the top.

Notes

Do not overmix the meat to avoid tough patties. Let patties rest briefly after browning to retain juices. If gravy is too thick, add a splash of broth; if too thin, simmer uncovered. For gluten-free, swap flour for cornstarch or GF blend. For dairy-free, swap butter for olive oil.
