Ingredients

  • 1 pound jumbo or large shrimp, peeled and deveined
  • 2 cups broccoli florets
  • 1 medium red bell pepper, sliced into strips
  • 2 medium carrots, julienned or sliced thin
  • 3 cloves garlic, minced
  • 1 tablespoon fresh grated ginger
  • 1/2 cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 tablespoon water
  • Pinch of salt
  • Dash of black pepper

Instructions

  1. Pat shrimp completely dry and toss with 1/2 teaspoon cornstarch, salt, and pepper. Let sit for 5 minutes.
  2. Chop broccoli, bell pepper, and carrots. Mince garlic and grate ginger.
  3. Whisk together soy sauce, oyster sauce, 1 tablespoon water, and remaining cornstarch in a small bowl. Set aside.
  4. Heat vegetable oil in a large skillet over medium-high heat. Sear shrimp in a single layer for 1-2 minutes per side until pink. Remove and set aside.
  5. Add more oil if needed. Stir-fry broccoli and carrots for 3-4 minutes, then add bell peppers and cook for 2 minutes until tender-crisp.
  6. Push veggies to the side; add garlic and ginger to the center and cook for 30 seconds until fragrant.
  7. Return shrimp to the pan. Pour sauce over everything and toss gently until sauce thickens (1-2 minutes).
  8. Drizzle with sesame oil, toss once more, and serve immediately over rice or noodles.

Notes

Ensure shrimp are completely dry before searing to prevent steaming. Do not overcrowd the pan when cooking shrimp. Shrimp are done when they form a loose ‘C’ shape; tight ‘O’ shape indicates overcooking. Serve over jasmine rice, brown rice, or cauliflower rice.
