- 4 ears fresh corn (or frozen whole kernel corn)
- 4 tablespoons unsalted butter, softened or cubed
- 3 tablespoons raw honey (mild honey like clover or wildflower)
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- Optional: Chopped chives or cilantro for garnish
Instructions
- Shuck the corn and cut the kernels off the cob into a bowl, catching the milky juice.
- Heat a heavy-bottomed skillet (cast iron preferred) over medium-high heat until hot.
- Add butter to the hot skillet and swirl to coat the bottom, allowing it to foam and sizzle.
- Add corn kernels and juice to the pan, spreading them in an even layer. Let sit undisturbed for 2 minutes to sear.
- Stir the corn, scraping up browned bits, and cook for another 3-4 minutes until tender but crisp.
- Pour honey over the corn and sprinkle with salt and pepper. Toss to combine and cook for 30 seconds to caramelize.
- Remove from heat, taste and adjust seasoning, garnish with herbs if desired, and serve immediately.
Notes
Do not stir the corn too early; let it sear to develop flavor. Keep heat at medium-high to prevent honey from burning. If using frozen corn, pat it dry before cooking. For dairy-free, substitute butter with olive oil or plant-based butter.
