  • 2 large Yukon Gold potatoes, diced into half-inch cubes
  • 1 medium yellow onion, diced
  • 1 red bell pepper, chopped
  • 3 cloves fresh garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chicken broth
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Wash, peel (optional), and dice potatoes into half-inch cubes. Dice onion and bell pepper. Mince garlic. Rinse potatoes in a colander to remove starch and pat dry thoroughly.
  2. Heat olive oil in a 12-inch skillet over medium-high heat. Add potatoes in a single layer and sear undisturbed for 5 minutes until golden. Stir and cook for another 5 minutes until tender but firm. Remove potatoes and set aside.
  3. In the same skillet, add ground turkey. Break into small crumbles and cook for 5-7 minutes until browned and no longer pink. Drain excess liquid if necessary.
  4. Add diced onions and bell peppers to the turkey. Sauté for 3-4 minutes until onions are translucent. Add garlic, smoked paprika, cumin, chili powder, garlic powder, and onion powder. Stir constantly for 1 minute.
  5. Return potatoes to the skillet and toss to coat in spices. Pour in chicken broth to deglaze the pan. Reduce heat to medium-low, cover, and simmer for 5 minutes.
  6. Remove lid, taste, and adjust seasoning with salt and pepper. Sprinkle with fresh parsley and serve immediately.

Notes

Ensure potatoes are dry before searing to achieve crispiness. Do not overcrowd the pan when searing potatoes. Lean turkey cooks quickly, so avoid overcooking to prevent dryness. The dish can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
