One-Skillet Cowboy Stir Fry: Easy Hearty Beef Recipe

  • Author: caroline_hicks
  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Description

A hearty, smoky beef stir fry that comes together in under 30 minutes with minimal cleanup. This one-skillet meal features seared sirloin, crisp vegetables, and a rich savory sauce, perfect for busy weeknights.

Ingredients

Scale
  • 1.5 lbs (680g) Beef Sirloin or Flank Steak, cut into thin strips against the grain
  • 1 large Yellow Onion, chopped into bite-sized pieces
  • 2 medium Bell Peppers (1 red, 1 green), sliced into strips
  • 4 cloves Garlic, minced
  • 1 tablespoon Fresh Ginger, grated
  • 1/4 cup (60ml) Soy Sauce (low-sodium recommended)
  • 1 tablespoon Worcestershire Sauce
  • 1 tablespoon Brown Sugar
  • 1/2 cup (120ml) Beef Broth (low-sodium recommended)
  • 1 teaspoon Cornstarch mixed with 1 tablespoon cold water
  • 2 tablespoons Vegetable Oil (or avocado/canola oil)
  • Salt and Black Pepper to taste

Instructions

  1. Prep all ingredients: Slice beef against the grain and season with salt and pepper. Chop onions and peppers. Mince garlic and grate ginger.
  2. Make the sauce: In a small bowl, whisk together soy sauce, Worcestershire sauce, brown sugar, beef broth, and the cornstarch slurry until smooth. Set aside.
  3. Sear the beef: Heat vegetable oil in a large skillet or wok over medium-high heat until shimmering. Add beef in a single layer (cook in batches if necessary) and sear for 2-3 minutes per side until browned but not fully cooked. Remove beef and set aside.
  4. Sauté the veggies: In the same pan, add onions and bell peppers. Sauté for 3-4 minutes until softened and slightly charred. Add garlic and ginger in the last minute, stirring constantly to prevent burning.
  5. Combine and simmer: Return the beef to the pan with the vegetables. Pour the sauce mixture over everything. Toss gently to coat and simmer for 1-2 minutes until the sauce thickens and becomes glossy.
  6. Serve: Remove from heat. Taste and adjust seasoning if needed. Serve immediately over steamed rice, cauliflower rice, or noodles. Garnish with green onions or sesame seeds.

Notes

[‘Slice beef against the grain to ensure tenderness.’, ‘Do not overcrowd the pan when searing beef to ensure proper browning rather than steaming.’, ‘Add garlic and ginger late in the cooking process to prevent burning.’, ‘Leftovers store well in the fridge for up to 3 days and freeze for up to 2 months.’, ‘For a gluten-free version, swap soy sauce for tamari or coconut aminos.’]
