A quick, 30-minute comfort food dinner featuring seared ground beef patties in a rich mushroom-onion sauce, topped with crispy baked mashed potatoes.

- 1.5 lbs ground beef (80/20 lean-to-fat ratio)
- 1 packet dry onion soup mix (divided)
- 1 cup low-sodium beef broth
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 box instant mashed potatoes
- 2 tbsp butter (divided)
- 1 tsp garlic powder
- 1/2 tsp black pepper
- Optional: 1 cup frozen peas or diced carrots
Instructions
- Preheat oven to 400°F (200°C). Grease a 12-inch oven-safe skillet with butter or oil.
- In a large bowl, combine ground beef, half of the onion soup mix, garlic powder, and black pepper. Mix gently and divide into 4-6 oval patties.
- Heat skillet over medium-high heat with 1 tbsp butter. Sear beef patties for 2-3 minutes per side until browned. Remove patties and set aside.
- In the same skillet, pour in beef broth and scrape up browned bits. Stir in cream of mushroom soup and remaining onion soup mix. Simmer for 1 minute.
- Return beef patties to the skillet, nestling them into the sauce. Spoon sauce over the top.
- Prepare instant mashed potatoes according to box instructions using half the recommended water for a thick consistency. Spoon potatoes over the beef and swirl with a fork.
- Bake for 15-18 minutes until potatoes are golden and sauce is bubbling. Optionally broil for 1-2 minutes for extra browning.
- Let rest for 5 minutes before serving.
Notes
Use 80/20 ground beef to prevent dryness. Do not overcrowd the pan when searing beef; sear in batches if necessary. Ensure mashed potatoes are thick to avoid a soupy bake. Let the dish rest for 5 minutes to allow sauce to thicken.
