Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup sun-dried tomatoes (packed in oil), chopped
- 1 cup heavy cream
- 1/2 cup low-sodium chicken broth
- 4 cloves garlic, minced
- 1 small yellow onion, finely diced
- 2 tablespoons unsalted butter
- 1 tablespoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- 1/2 cup grated Parmesan cheese
- Salt and black pepper, to taste
- 1/4 cup fresh basil, chopped
Instructions
- Place chicken breasts between plastic wrap and pound to an even 1/2-inch thickness. Season both sides generously with salt and pepper.
- Heat 1 tablespoon of butter in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown. Remove chicken to a plate and set aside.
- In the same skillet, add remaining 1 tablespoon of butter. Sauté diced onion for 2-3 minutes until softened. Add minced garlic and red pepper flakes; cook for 1 minute until fragrant.
- Add chopped sun-dried tomatoes to the pan and stir for 1 minute. Pour in chicken broth and scrape up browned bits from the bottom of the pan. Simmer for 2 minutes.
- Stir in heavy cream and Italian seasoning. Bring sauce to a gentle simmer. Return chicken to the pan, nesting it into the sauce. Cover and simmer on low heat for 10-12 minutes until chicken reaches 165°F.
- Remove chicken from the pan. Stir in Parmesan cheese until melted and smooth. Adjust seasoning with salt and pepper if needed.
- Return chicken to the pan to coat in sauce. Garnish with fresh chopped basil and serve immediately.
Notes
Pound chicken to even thickness for uniform cooking. Do not burn the garlic by adding it too early or using high heat. If the sauce is too thick, add a splash of broth; if too thin, simmer longer. For a lighter version, substitute half the heavy cream with whole milk or half-and-half. This recipe is naturally gluten-free, but check broth labels.
