Description
These homemade frozen rolls use just three core ingredients to create a light, airy, and versatile dough that can be prepared, frozen raw, and baked fresh whenever needed. Perfect for busy schedules and meal prepping.
Ingredients
Scale
- 4 cups (500g) All-Purpose Flour
- 2 teaspoons (7g) Instant Yeast
- 1 ½ cups (355ml) Warm Milk
- 1 ½ teaspoons Salt
- Optional: Melted butter or egg wash for topping
Instructions
- In a large bowl, whisk together the flour, instant yeast, and salt until evenly distributed.
- Pour in the warm milk and stir with a silicone spatula or hand until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic, passing the windowpane test.
- Place the dough in a lightly oiled bowl, cover with plastic wrap or a damp towel, and let rise in a warm spot for 1-2 hours until doubled in size.
- Punch down the dough to release air, divide into equal portions, and roll each piece into a ball by tucking the edges underneath.
- Place rolls in a baking dish spaced apart for individual rolls or close together for pull-apart style.
- For freezing: Flash freeze shaped rolls on a tray for 1-2 hours until solid, then transfer to a freezer-safe bag or container.
- To bake from frozen: Thaw in the fridge overnight, let rise at room temperature until doubled, then bake.
Notes
Ensure milk is warm to the touch but not hot to avoid killing the yeast. Weigh ingredients for accuracy. If using active dry yeast, bloom it in warm water first. Rolls can be stored in the freezer for up to 3 months. Reheat baked rolls in the oven at 350°F (175°C) for 10 minutes to restore freshness.
