Description

A quick, crunchy, and zesty chicken salad bowl made with Greek yogurt dressing. This high-protein meal is perfect for meal prep, keeps you full for hours, and comes together in under 15 minutes.


Ingredients

  • 1 pound (450g) cooked chicken breast or thighs, shredded
  • 1/2 cup (120g) plain non-fat Greek yogurt
  • 2 stalks celery, finely diced
  • 1 medium cucumber, peeled and diced
  • 2 tablespoons fresh dill, chopped
  • 1/4 cup red onion, finely minced
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken: If using raw chicken, season with salt, pepper, and garlic powder, then poach for 12-15 minutes until cooked through. Let cool completely and shred with two forks. If using rotisserie chicken, simply shred it.
  2. Prep the vegetables: Finely dice the celery and cucumber, and mince the red onion. Place all chopped vegetables in a large bowl.
  3. Make the dressing: In a small bowl, whisk together the Greek yogurt, lemon juice, garlic powder, salt, and pepper until smooth and creamy. Taste and adjust seasoning if needed.
  4. Combine ingredients: Add the shredded chicken to the bowl with the vegetables. Pour the dressing over the top and gently fold everything together until evenly coated, being careful not to mash the chicken.
  5. Add herbs: Stir in the fresh dill and fold gently one last time.
  6. Chill and serve: Let the salad chill in the fridge for at least 30 minutes to allow flavors to meld. Serve over greens, in a pita, or on its own.

Notes

Ensure chicken is cooled completely before shredding to prevent wilting the greens. Pat vegetables dry after washing to keep the salad crisp. Store dressing separately if meal prepping for more than a day to maintain texture. Do not freeze this salad as the yogurt and vegetables will become watery.
