Instructions
- Preheat oven to 375°F (190°C).
- Lightly grease a 9×13 inch baking dish with butter or cooking spray.
- In a large bowl, whisk together cornmeal, cumin, chili powder, garlic powder, salt, and pepper.
- In a separate bowl, whisk buttermilk, eggs, and melted butter.
- Pour wet ingredients into dry ingredients and stir gently until just combined.
- Fold in corn, black beans, bacon bits, jalapeño, and half of the cheese.
- Pour batter into the prepared baking dish and spread evenly.
- Sprinkle remaining cheese over the top.
- Bake for 25-30 minutes until the top is golden brown and a knife inserted in the center comes out clean.
- Optional: Broil for the last 2 minutes for a crispy top.
- Let cool for 5 minutes before serving.
Notes
Ensure eggs and buttermilk are at room temperature for best mixing. Do not overmix the batter to avoid a tough texture. If the batter is too thick, add a splash of milk. For a crispy top, broil for the last 2 minutes but watch closely to prevent burning.
