Grilled Shrimp Avocado Bowl: The Perfect 15-Minute Summer Salad

  • Author: caroline_hicks
  • Total Time: 19 minutes
  • Yield: 2 servings 1x

Description

A quick, healthy, and flavorful summer salad featuring charred shrimp marinated in lime and spices, served over mixed greens with creamy avocado.

Ingredients

Scale
  • 1 pound (450g) jumbo or large shrimp, peeled and deveined
  • 2 medium Hass avocados, ripe
  • 2 fresh limes (juice and zest)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • 2 cloves garlic, minced
  • ¼ teaspoon red chili flakes (optional)
  • 1 small bunch cilantro, chopped
  • Salt and black pepper to taste
  • 4 cups mixed greens or spinach
  • Optional: Cherry tomatoes, red onion, cucumber slices, toasted pistachios, or almonds

Instructions

  1. Rinse the shrimp under cold water and pat them completely dry with paper towels to ensure a good sear.
  2. In a small bowl, whisk together the olive oil, juice of one lime, lime zest, smoked paprika, cumin, minced garlic, chili flakes, salt, and pepper to create a marinade.
  3. Pour the marinade over the shrimp and toss gently to coat. Let them sit at room temperature for 5-10 minutes.
  4. Wash and dry the greens, then place them in a large serving bowl.
  5. Slice the avocados in half, remove the pit, and scoop into chunks. Drizzle with a little olive oil and salt to prevent browning.
  6. Heat a grill pan or outdoor grill to medium-high until light smoke rises.
  7. Place the shrimp in a single layer on the grill. Cook for 2 minutes on the first side until orange and charred, then flip and cook for another 1-2 minutes until opaque and pink.
  8. Spoon the hot shrimp over the bed of greens.
  9. Arrange the avocado chunks on top.
  10. Squeeze the remaining lime over everything and sprinkle with fresh cilantro.
  11. Serve immediately while the shrimp are warm and the avocado is cool.

Notes

Do not marinate the shrimp for more than 10 minutes as the lime acid can change the texture. Ensure shrimp are very dry before grilling to avoid steaming. Shrimp are done when they form a loose ‘C’ shape; an ‘O’ shape indicates overcooking. If using wooden skewers, soak them in water first to prevent burning.
