A quick and flavorful weeknight dinner featuring tender salmon fillets coated in a sweet and tangy honey mustard glaze, grilled to perfection for a smoky, caramelized finish.

- 4 salmon fillets (6–8 oz each, skin-on)
- 2 tablespoons Dijon mustard
- 3 tablespoons raw honey
- 2 tablespoons extra virgin olive oil
- 2–3 cloves fresh garlic, minced
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly cracked black pepper
- Fresh parsley or dill for garnish (optional)
- Lemon wedges for serving (optional)
Instructions
- Preheat grill to medium-high heat (400°F/200°C). Clean grates thoroughly and oil them generously with a paper towel dipped in oil to prevent sticking.
- Pat salmon fillets dry with paper towels. Season both sides lightly with salt and pepper. If skin-on, score the skin lightly to prevent curling.
- In a small bowl, whisk together Dijon mustard, honey, olive oil, minced garlic, lemon juice, oregano, and black pepper until smooth and emulsified.
- Brush half of the glaze over the top of the salmon fillets. Let sit at room temperature for 15-20 minutes. Do not marinate longer to avoid the acid cooking the fish.
- Place fillets skin-side down on the oiled grates. Close lid and cook for 4-5 minutes without moving to develop grill marks and crisp the skin.
- Carefully flip fillets using tongs. Brush the remaining glaze over the top. Close lid and cook for another 3-4 minutes until internal temperature reaches 145°F (63°C).
- Remove salmon from grill and let rest for 5 minutes to allow juices to redistribute.
- Garnish with fresh herbs and serve immediately with lemon wedges.
Notes
Ensure the grill grates are well-oiled to prevent sticking. Do not flip the fish too early; wait until it releases easily from the grate. Salmon continues to cook after removal (carryover cooking), so remove at 140°F for medium or 145°F for well-done. Leftovers can be stored in the fridge for up to 2 days.
