- 2 lbs large shrimp, peeled and deveined
- 4 tbsp unsalted butter
- 6 cloves garlic, minced
- 2 cups broccoli florets
- 1 large red bell pepper, sliced into strips
- 1 medium zucchini, sliced into half-moons
- 1/2 tsp red pepper flakes
- 2 tbsp fresh lemon juice
- 2 tbsp fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Pat the shrimp dry with paper towels and season lightly with salt and pepper.
- Chop the broccoli into florets, slice the bell peppers, and chop the zucchini into roughly equal-sized pieces.
- Heat a large skillet over medium-high heat and add 2 tablespoons of butter, letting it melt and foam.
- Add the shrimp in a single layer and cook for 1-2 minutes per side until pink and opaque. Remove from pan and set aside.
- Add the remaining 2 tablespoons of butter to the pan. Add broccoli and bell peppers, sautéing for 3 minutes.
- Add the zucchini and cook for another 2 minutes until tender-crisp.
- Reduce heat to medium, add minced garlic and red pepper flakes, and stir constantly for 30 seconds without burning.
- Return the shrimp to the pan, toss to coat in the sauce, and squeeze fresh lemon juice over the top.
- Garnish with fresh parsley, adjust seasoning if needed, and serve immediately.
Notes
Ensure shrimp are patted dry before cooking to achieve a good sear. Add garlic late in the cooking process to prevent burning. If using frozen shrimp, thaw completely and dry thoroughly. For a dairy-free version, substitute butter with olive oil or plant-based butter.
