  • 2 lbs large shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 6 cloves garlic, minced
  • 2 cups broccoli florets
  • 1 large red bell pepper, sliced into strips
  • 1 medium zucchini, sliced into half-moons
  • 1/2 tsp red pepper flakes
  • 2 tbsp fresh lemon juice
  • 2 tbsp fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Pat the shrimp dry with paper towels and season lightly with salt and pepper.
  2. Chop the broccoli into florets, slice the bell peppers, and chop the zucchini into roughly equal-sized pieces.
  3. Heat a large skillet over medium-high heat and add 2 tablespoons of butter, letting it melt and foam.
  4. Add the shrimp in a single layer and cook for 1-2 minutes per side until pink and opaque. Remove from pan and set aside.
  5. Add the remaining 2 tablespoons of butter to the pan. Add broccoli and bell peppers, sautéing for 3 minutes.
  6. Add the zucchini and cook for another 2 minutes until tender-crisp.
  7. Reduce heat to medium, add minced garlic and red pepper flakes, and stir constantly for 30 seconds without burning.
  8. Return the shrimp to the pan, toss to coat in the sauce, and squeeze fresh lemon juice over the top.
  9. Garnish with fresh parsley, adjust seasoning if needed, and serve immediately.

Notes

Ensure shrimp are patted dry before cooking to achieve a good sear. Add garlic late in the cooking process to prevent burning. If using frozen shrimp, thaw completely and dry thoroughly. For a dairy-free version, substitute butter with olive oil or plant-based butter.
