Ingredients

  • Smoked salmon slices (cold-smoked, thin cut)
  • English cucumbers (hothouse)
  • Full-fat cream cheese (softened to room temperature)
  • Fresh dill (finely chopped)
  • Lemon juice (fresh)
  • Black pepper (freshly cracked)
  • Red onion (finely minced, optional)
  • Salt (to taste, optional)

Instructions

  1. Wash the English cucumber thoroughly and pat dry.
  2. Using a Y-shaped vegetable peeler, shave long, thin strips (ribbons) from the length of the cucumber, aiming for 2-3 inch wide ribbons.
  3. In a small mixing bowl, combine the softened cream cheese, fresh dill, lemon juice, and black pepper. Mix until smooth and creamy. Fold in red onion if using.
  4. Lay a slice of smoked salmon flat on a work surface, shiny side down.
  5. Place a cucumber ribbon near the bottom edge of the salmon, leaving about an inch of space on the sides.
  6. Spread a thin layer of the cream cheese mixture over the salmon where the cucumber will sit.
  7. Place the cucumber ribbon on top of the cream cheese.
  8. Starting from the end with the cucumber, roll the salmon up tightly.
  9. Place the finished rolls seam-side down on a plate.
  10. Cover with plastic wrap and refrigerate for at least 30 minutes to allow the cream cheese to firm up and the rolls to set.
  11. Remove from fridge, cut into halves or thirds, and serve chilled.

Notes

Ensure the cream cheese is softened to room temperature to prevent tearing the salmon. Use cold cucumbers for better structural integrity. Do not overfill with cream cheese or the rolls may burst. Chilling is crucial for the rolls to hold their shape. If using regular cucumbers, remove the seeds to prevent sogginess.
