Instructions
- Pat chicken pieces completely dry with paper towels and season generously with salt and pepper.
- In a small bowl, whisk together Dijon mustard, minced garlic, chopped fresh rosemary, and olive oil to form a paste.
- If using flour, dredge chicken pieces in flour, shaking off excess. Coat each piece thoroughly in the rosemary-Dijon mixture, pressing to adhere.
- Heat a heavy-bottomed skillet (cast iron or stainless steel) over medium-high heat with 1 tablespoon of olive oil until shimmering.
- Place chicken in the pan without crowding. Sear for 5-6 minutes on the first side without moving to develop a golden-brown crust.
- Flip chicken and cook for another 4-6 minutes, or until internal temperature reaches 165°F (74°C). Reduce heat if browning too fast.
- Remove chicken from pan and let rest for 5 minutes before serving. Optionally deglaze pan with lemon juice or broth for a sauce.
