  • 3 cloves garlic, minced
  • 1/4 cup Dijon mustard
  • 2 tablespoons extra virgin olive oil
  • Kosher salt and freshly cracked black pepper
  • 1 tablespoon olive oil (for cooking)
  • Splash of fresh lemon juice (for serving)

Instructions

  1. Pat chicken pieces completely dry with paper towels and season generously with salt and pepper.
  2. In a small bowl, whisk together Dijon mustard, minced garlic, chopped fresh rosemary, and olive oil to form a paste.
  3. If using flour, dredge chicken pieces in flour, shaking off excess. Coat each piece thoroughly in the rosemary-Dijon mixture, pressing to adhere.
  4. Heat a heavy-bottomed skillet (cast iron or stainless steel) over medium-high heat with 1 tablespoon of olive oil until shimmering.
  5. Place chicken in the pan without crowding. Sear for 5-6 minutes on the first side without moving to develop a golden-brown crust.
  6. Flip chicken and cook for another 4-6 minutes, or until internal temperature reaches 165°F (74°C). Reduce heat if browning too fast.
  7. Remove chicken from pan and let rest for 5 minutes before serving. Optionally deglaze pan with lemon juice or broth for a sauce.

Notes

Ensure chicken is completely dry before cooking to maximize crispiness. Do not crowd the pan to prevent steaming. Let chicken rest after cooking to retain juices. For a spicy kick, add red pepper flakes to the mustard mixture. For a baked option, bake at 400°F for 20-25 minutes on a wire rack.
