Description
These crispy jalapeño popper egg rolls capture the restaurant-quality flavor of sports bar appetizers with a crunchy exterior and a gooey, spicy cream cheese filling. Perfect for game day or any party.

- 4–5 medium large jalapeño peppers
- 8 oz full-fat cream cheese, softened to room temperature
- 1 cup sharp cheddar cheese, freshly grated
- 1 package square egg roll wrappers
- 2 cloves garlic, minced
- 2 stalks green onions, thinly sliced
- 1 tsp smoked paprika
- 1 large egg beaten with 1 tbsp water (for egg wash)
- Neutral oil (vegetable, canola, or peanut) for frying
Instructions
- Wash jalapeños and wear gloves. Slice peppers in half lengthwise, remove seeds and membranes, and slice into thin matchstick-sized strips (about 1 cup).
- In a medium bowl, combine softened cream cheese, grated cheddar, minced garlic, green onions, and smoked paprika. Mix until smooth. Chill mixture for 15 minutes.
- Lay out egg roll wrappers on a clean surface, keeping them covered with a damp towel to prevent drying.
- Place 2 tablespoons of cheese mixture in the center of a wrapper oriented like a diamond. Top with jalapeño strips.
- Fold the bottom corner up over the filling, then fold in the left and right corners tightly. Roll upward and brush the top corner with egg wash to seal.
- Repeat with remaining wrappers and filling, placing finished rolls on a parchment-lined tray without touching.
- Heat 2 inches of oil in a large skillet or Dutch oven to 350°F (175°C).
- Fry 3-4 egg rolls at a time for 2-3 minutes per side until golden brown and crispy.
- Remove with a slotted spoon and drain on a wire rack. Serve immediately.
Notes
Keep wrappers covered with a damp towel to prevent tearing. Ensure oil is at 350°F to avoid soggy or burnt rolls. For extra crispiness, double fry the rolls. Can be frozen before frying; add 1-2 minutes to cooking time if frying from frozen.
