Description

  • 45 medium large jalapeño peppers
  • 8 oz full-fat cream cheese, softened to room temperature
  • 1 cup sharp cheddar cheese, freshly grated
  • 1 package square egg roll wrappers
  • 2 cloves garlic, minced
  • 2 stalks green onions, thinly sliced
  • 1 tsp smoked paprika
  • 1 large egg beaten with 1 tbsp water (for egg wash)
  • Neutral oil (vegetable, canola, or peanut) for frying

Instructions

  1. Wash jalapeños and wear gloves. Slice peppers in half lengthwise, remove seeds and membranes, and slice into thin matchstick-sized strips (about 1 cup).
  2. In a medium bowl, combine softened cream cheese, grated cheddar, minced garlic, green onions, and smoked paprika. Mix until smooth. Chill mixture for 15 minutes.
  3. Lay out egg roll wrappers on a clean surface, keeping them covered with a damp towel to prevent drying.
  4. Place 2 tablespoons of cheese mixture in the center of a wrapper oriented like a diamond. Top with jalapeño strips.
  5. Fold the bottom corner up over the filling, then fold in the left and right corners tightly. Roll upward and brush the top corner with egg wash to seal.
  6. Repeat with remaining wrappers and filling, placing finished rolls on a parchment-lined tray without touching.
  7. Heat 2 inches of oil in a large skillet or Dutch oven to 350°F (175°C).
  8. Fry 3-4 egg rolls at a time for 2-3 minutes per side until golden brown and crispy.
  9. Remove with a slotted spoon and drain on a wire rack. Serve immediately.

Notes

Keep wrappers covered with a damp towel to prevent tearing. Ensure oil is at 350°F to avoid soggy or burnt rolls. For extra crispiness, double fry the rolls. Can be frozen before frying; add 1-2 minutes to cooking time if frying from frozen.
