Ingredients
- 1.5 – 2 lbs boneless, skinless chicken thighs

Instructions
- Pat chicken thighs dry with paper towels and place them in a single layer at the bottom of a 4-to-6-quart slow cooker.
- In a medium bowl, whisk together soy sauce, brown sugar, rice vinegar, minced garlic, and minced ginger until the sugar is mostly dissolved.
- Pour the sauce mixture evenly over the chicken, ensuring each piece is thoroughly coated.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is tender and easily shreds with a fork.
- Remove the chicken from the slow cooker and set aside on a plate or baking sheet.
- If the sauce is too thin, stir the cornstarch slurry into the hot sauce in the slow cooker and cook on high for 5-10 minutes until thickened. Alternatively, simmer the sauce in a saucepan on the stove.
- Preheat your oven’s broiler on high. Line a baking sheet with aluminum foil and lightly grease it.
