- 1 pound boneless, skinless chicken breast (pounded thin or shredded)
- 2 large eggs, room temperature
- 1 cup Panko breadcrumbs
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon soy sauce (low-sodium recommended)
- 2 stalks green onions, thinly sliced
- 1 tablespoon cornstarch
- Salt and black pepper to taste
- Neutral oil (vegetable, canola, or avocado) for frying
- 2 tablespoons fresh cilantro, chopped (optional)
Instructions
- If using raw chicken, pound breasts to ¼ inch thickness. If using cooked chicken, shred into bite-sized pieces. Place in a large mixing bowl.
- In a separate medium bowl, whisk together eggs, soy sauce, minced garlic, grated ginger, and green onions until smooth.
- Pour the egg mixture over the chicken. Add cornstarch, salt, and pepper. Mix thoroughly to coat the chicken evenly.
- Spread Panko breadcrumbs on a flat plate. Take about ¼ cup of the chicken mixture, shape into a patty, and press firmly into the breadcrumbs to coat all sides.
- Heat about ¼ inch of neutral oil in a large skillet over medium-high heat until shimmering.
- Fry fritters in batches for 2-3 minutes per side until golden brown and crispy. Avoid overcrowding the pan.
- Remove fritters and place on a wire cooling rack to rest for a minute before serving.
Notes
Ensure chicken is not too wet to maintain crispiness. Do not skip cornstarch as it helps create a lighter crust. Keep fritters uniform in size for even cooking. Can be made in an air fryer at 400°F for 10-12 minutes if preferred.
