- 1 teaspoon yellow mustard (for sauce)
- 1 teaspoon hot sauce (for sauce)
- 1 tablespoon pickle relish (for sauce)
Instructions
- Prep the cabbage by removing outer leaves, cutting out the core, and slicing into uniform ¼-inch strips.
- Heat a large skillet or cast iron pan over medium-high heat and add butter and olive oil, allowing the butter to melt and foam.
- Add minced garlic to the pan and stir constantly for 30 seconds until fragrant, being careful not to burn it.
- Add cabbage strips to the pan, tossing to coat in the fat. Season with salt, pepper, paprika, and onion powder.
- Cook the cabbage for 10-12 minutes, stirring occasionally, until it softens, browns, and caramelizes.
- Reduce heat to medium-low and sprinkle cheddar, mozzarella, and parmesan evenly over the cabbage.
- Cover the pan with a lid for 2 minutes to allow the cheese to melt.
- Remove the lid and let excess moisture evaporate. For a crispier top, transfer the skillet to a 400°F (200°C) oven for 3-5 minutes.
- Remove from heat and let rest for 1 minute before serving with optional burger sauce.
Notes
Do not overcrowd the pan to ensure the cabbage fries rather than steams. Use fresh shredded cheese for better melting. If using breadcrumbs, almond flour is a good low-carb substitute. The dish is best served immediately as crispiness fades upon cooling.
