Crispy Blueberry Peach Crumble

  • Author: caroline_hicks
  • Total Time: 80 minutes
  • Yield: 8 servings 1x

Description

A comforting dessert featuring a perfect balance of sweet peaches and tart blueberries, topped with a crunchy mixture of rolled oats, almond flour, and cold butter for maximum texture.

Ingredients

Scale
  • 4 cups ripe peaches, peeled and sliced
  • 2 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1 cup unsalted butter, cold and cubed
  • 1 cup brown sugar, packed
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel and slice peaches. If firm, blanch in boiling water for 30 seconds to ease peeling. Place in a large bowl.
  3. Add blueberries, granulated sugar, lemon juice, cornstarch, and vanilla to the peaches. Toss gently to coat and let sit for 10 minutes to draw out juices.
  4. In a separate large bowl, whisk together rolled oats, all-purpose flour, almond flour, brown sugar, cinnamon, and salt.
  5. Add cold, cubed butter to the dry ingredients. Use a pastry cutter or fingers to work the butter in until the mixture resembles coarse crumbs with pea-sized clumps.
  6. Pour the fruit mixture into a 9×13 inch baking dish and spread evenly. Sprinkle the topping over the fruit, pressing down gently in spots to create crunchy peaks.
  7. Bake for 45-50 minutes until the topping is golden brown and the fruit is bubbling vigorously in the center. Cover with foil if browning too quickly.
  8. Let cool for at least 20 minutes before serving to allow juices to thicken.

Notes

Ensure butter is very cold to maintain flaky texture. Use ripe peaches that yield slightly to pressure. For gluten-free, use certified GF oats and flour. For dairy-free, substitute butter with cold coconut oil or vegan butter. Can be frozen unbaked for up to 3 months.
