Creamy Vegetable Rice: The Proper Sauce Method

Description

A luxurious side dish that transforms simple rice into a velvety, sauce-coated meal by sweating aromatics, toasting grains, and gradually incorporating vegetable-rich broth to release natural starches.


Ingredients

  • 3 tablespoons unsalted butter
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup Arborio or short-grain rice
  • 3 to 4 cups vegetable broth, low-sodium and warm
  • 1/2 cup diced carrots, small dice
  • 1/2 cup frozen peas
  • 1/4 cup frozen corn
  • 2 tablespoons heavy cream or half-and-half (optional)
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Finely dice the onion and mince the garlic. Dice carrots into small, uniform 1/4-inch pieces.
  2. Heat 1 tablespoon of butter in a heavy-bottomed Dutch oven or saucepan over medium heat. Add the diced onions and a pinch of salt. Cook for 5-7 minutes until soft, translucent, and sweet, without browning.
  3. Add the minced garlic and diced carrots. Cook for another 2 minutes until fragrant and carrots begin to soften.
  4. Add the rice to the pot. Stir constantly for 2-3 minutes until the grains become translucent around the edges and smell nutty.
  5. Optional: Deglaze with a splash of white wine and let it bubble away for 30 seconds.
  6. Add warm vegetable broth one ladle at a time, stirring constantly. Wait until the liquid is mostly absorbed before adding the next ladle. Repeat this process for 15-20 minutes until the rice is tender but still has a slight bite (al dente).
  7. Once the rice is cooked, stir in the heavy cream, frozen peas, and corn. The residual heat will warm the vegetables through.
  8. Stir in the remaining 2 tablespoons of butter.
  9. Season with salt and pepper to taste. Stir in the fresh parsley and serve immediately.

Notes

Keep the broth warm to prevent shocking the rice. Do not skip the toasting step for better flavor. Stir frequently to release starch for creaminess. If using long-grain rice, reduce liquid and cooking time as it is less starchy. For dairy-free, use olive oil and coconut milk. For vegan, use olive oil and cashew cream.
