  • ¼ cup White Sugar
  • ½ teaspoon Ground Cinnamon
  • 1 tablespoon Lemon Juice

Instructions

  1. Preheat oven to 325°F (165°C). Mix graham cracker crumbs, melted butter, sugar, and salt until resembling wet sand. Press firmly into the bottom of a 9-inch springform pan.
  2. Bake crust for 8-10 minutes until toasted. Let cool completely.
  3. While crust cools, combine sliced peaches, sugar, cinnamon, lemon juice, and cornstarch in a small saucepan. Cook over medium heat for 10-12 minutes until juices thicken. Cool to room temperature.
  4. In a large bowl, beat softened cream cheese until smooth. Add sugar and beat until combined.
  5. Mix in sour cream and vanilla extract until smooth. Add flour and mix on low speed just until incorporated.
  6. Add eggs one at a time, mixing on low speed just until combined. Do not overmix.
  7. Pour batter over cooled crust. Spoon cooled peach mixture over the top.
  8. Bake at 325°F (165°C) for 60-70 minutes until edges are set but center has a slight jiggle.
  9. Turn off oven and crack door open. Let cheesecake sit in oven for 1 hour to cool gradually.
  10. Remove from oven, run a knife around the edge, and cool completely on a wire rack.
  11. Refrigerate for at least 4 hours or overnight before serving.
