Ingredients
Scale
- 4 cups (500g) all-purpose flour
- 1/2 cup (100g) granulated white sugar
- 2 1/4 teaspoons (1 packet) instant yeast
- 1 teaspoon salt
- 1 cup (240ml) warm milk (110°F/43°C)
- 1/2 cup (120g) full-fat sour cream
- 2 large eggs, room temperature
- 1/2 cup (113g) unsalted butter, softened
- 2 tablespoons orange zest
- 1/4 cup (57g) melted butter (for filling)
- 1/2 cup (100g) sugar (for filling)
- 1 tablespoon dried orange peel (optional)
- 1 tablespoon orange juice (for filling)
- 2 cups (240g) confectioners’ sugar (for glaze)
- 1/4 cup (60g) sour cream (for glaze)
- 2–3 tablespoons fresh orange juice (for glaze)
- 1 teaspoon vanilla extract (for glaze)
Instructions
- Warm milk and sour cream together over low heat until 110°F (43°C). Stir in sugar until dissolved and let cool slightly.
- In a stand mixer with a dough hook, combine flour, sugar, yeast, and salt. Add warm milk mixture, eggs, and butter. Mix on low until shaggy, then knead on medium for 5-7 minutes until smooth and elastic.
- Transfer dough to a greased bowl, cover, and let rise in a warm place for 1-1.5 hours until doubled.
- Mix melted butter, sugar, dried orange peel, and orange juice for the filling.
- Punch down dough, roll into a 12×18 inch rectangle, and spread filling evenly. Roll tightly into a log and cut into 12 pieces.
- Place rolls in a greased 9×13 inch baking dish, cover, and let rise again for 30-45 minutes until puffy.
- Preheat oven to 350°F (175°C). Bake rolls for 25-30 minutes until golden brown.
- Whisk confectioners’ sugar, sour cream, orange juice, and vanilla until smooth for the glaze.
- Let rolls cool in pan for 10 minutes, then drizzle with glaze and serve warm.
Notes
Do not skip the second rise for bakery-style softness. If using active dry yeast, proof it first. For best flavor, let dough rise slowly in the refrigerator overnight. Ensure glaze is applied while rolls are warm, not hot or cold.
