Description

A professional-quality dessert featuring a crisp, buttery sugar cookie base topped with a stabilized, tangy cream cheese filling and fresh mixed berries. This recipe ensures structural integrity and a balanced, bright flavor profile perfect for summer gatherings.

Ingredients

Scale
  • 2 1/4 cups (280g) all-purpose flour
  • 1 cup (226g) unsalted butter, softened to room temperature
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 8 ounces (226g) full-fat cream cheese, softened
  • 1/2 cup (60g) powdered sugar
  • 2 tablespoons heavy cream
  • 2 cups mixed berries (strawberries sliced, blueberries, raspberries)
  • 2 tablespoons apricot jam, warmed (optional)

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy (3-4 minutes).
  2. Add the egg and vanilla extract, mixing until combined.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to wet ingredients on low speed until just combined.
  4. Transfer dough to a prepared 18×13 inch baking sheet. Press evenly to cover the surface, aiming for 1/4 inch thickness. Prick surface with a fork.
  5. Bake for 12-15 minutes until edges are lightly golden. Cool completely in the pan on a wire rack.
  6. While crust cools, beat cream cheese and powdered sugar until smooth. Add vanilla and heavy cream, beating on medium-high for 2-3 minutes until light and airy.
  7. Spread cream cheese mixture evenly over the cooled crust using an offset spatula.
  8. Arrange berries on top of the filling, pressing gently to adhere.
  9. Chill in the refrigerator for at least 30 minutes to set.
  10. Optional: Brush warmed apricot jam over berries for a glossy finish. Slice and serve.

Notes

Ensure all dairy ingredients (butter, cream cheese, egg) are at room temperature but not melted to prevent a dense texture or runny filling. If using frozen berries, thaw and drain thoroughly to avoid excess moisture. For a gluten-free option, substitute all-purpose flour with a 1-to-1 gluten-free baking blend. Store covered in the refrigerator for up to 3 days; do not freeze the assembled pizza.
