  • Author: caroline_hicks
  • Total Time: 60 minutes
  • Yield: 8 servings 1x

Description

A rich, comforting dessert featuring juicy blueberries baked under a tender, creamy, cake-like topping. This easy-to-make cobbler delivers a textural masterpiece that is perfect for summer evenings or rainy days.

Ingredients

Scale
  • 2 cups fresh or frozen blueberries
  • 1/2 cup granulated sugar (for filling)
  • 1 tablespoon cornstarch
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup whole milk
  • 1/2 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar (for topping)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×9 inch baking dish.
  2. In a medium bowl, toss blueberries with 1/2 cup sugar, cornstarch, lemon juice, and vanilla until coated. Set aside.
  3. In a large bowl, whisk together flour, 1/2 cup sugar, baking powder, and salt.
  4. Whisk in milk, sour cream, and melted butter until the batter is smooth and creamy. Do not overmix.
  5. Pour the blueberry mixture into the prepared baking dish.
  6. Pour the batter directly over the berries without stirring.
  7. Bake for 40-45 minutes until the top is golden brown and edges are bubbling.
  8. Remove from oven and let rest on a cooling rack for at least 10 minutes before serving.

Notes

If using frozen blueberries, do not thaw them completely to avoid a watery cobbler. Do not overmix the batter to ensure a tender topping. Let the cobbler rest for 10 minutes to allow the filling to thicken. For a crispier top, broil for the last minute of baking.
