  • 1/2 cup (50g) plain dried breadcrumbs
  • 1 large egg
  • 1/4 cup (60ml) milk
  • 1 packet (1.75 oz) onion soup mix
  • 1 tsp (5g) garlic powder
  • 1 tbsp (15ml) Worcestershire sauce
  • 2 tbsp (30g) butter, divided
  • 1 large yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups (480ml) beef broth, low-sodium
  • 1/4 cup (60ml) heavy cream
  • 2 tbsp (15g) flour
  • Salt and black pepper to taste
  • Fresh cremini or button mushrooms, sliced

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, egg, milk, onion soup mix, garlic powder, Worcestershire sauce, salt, and pepper. Mix gently with hands and divide into four equal oval patties.
  2. Heat 1 tablespoon of butter in a large skillet over medium heat. Sauté diced onions for 5-7 minutes until soft and translucent. Add minced garlic in the last minute. Remove onions and set aside.
  3. Wipe skillet if needed and add remaining 1 tablespoon of butter. Increase heat to medium-high. Brown patties for 3-4 minutes per side until deeply browned. Remove patties and set aside.
  4. In the same skillet, cook sliced mushrooms for 5 minutes until they release moisture and brown.
  5. Sprinkle flour over mushrooms and stir for 1 minute. Slowly pour in beef broth while whisking constantly. Add cooked onions back to the pan and simmer for 3-4 minutes until slightly thickened.
  6. Return beef patties to the skillet, nestling them into the gravy. Reduce heat to low, cover, and simmer for 10-15 minutes until internal temperature reaches 160°F (71°C).
  7. Remove lid and stir in heavy cream. Simmer for 2 minutes to heat through. Adjust seasoning with salt and pepper.
  8. Serve immediately, spooning gravy and mushrooms over the patties. Garnish with fresh parsley if desired.

Notes

Do not overmix the meat to avoid tough patties. Let the meat mixture rest in the fridge for 15 minutes before forming patties for easier handling. Ensure the internal temperature of the beef reaches 160°F. For a gluten-free version, use gluten-free breadcrumbs and cornstarch instead of flour. For dairy-free, substitute butter with olive oil and heavy cream with coconut cream.
