  • 4 to 6 small bolillo rolls (or French baguettes/hard rolls)
  • 4 cloves garlic, minced
  • 3 tablespoons unsalted butter, divided
  • 1/2 cup low-sodium chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 small yellow onion, finely chopped
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 cup shredded Oaxaca cheese, Monterey Jack, or Mozzarella
  • Optional toppings: sliced avocado, pickled jalapeños, crema, fresh cilantro

Instructions

  1. Pat chicken thighs dry and season generously with salt, pepper, cumin, and smoked paprika.
  2. Heat 1.5 tablespoons of butter in a large skillet over medium-high heat. Sear chicken in a single layer for 3-4 minutes per side until golden brown. Remove chicken and set aside.
  3. In the same pan, sauté chopped onion until softened. Add minced garlic and cook for 30 seconds until fragrant.
  4. Return chicken to the pan. Add diced tomatoes and chicken broth. Reduce heat to medium-low, cover, and simmer for 10 minutes until chicken is tender. Uncover and let excess liquid reduce.
  5. Slice bolillo rolls in half horizontally. Brush cut sides with remaining 1.5 tablespoons of butter. Toast cut-side down in a skillet or toaster oven until golden and crisp.
  6. Assemble sandwiches by placing chicken mixture on toasted rolls, topping with cheese, and melting under a broiler for 1-2 minutes if desired. Add optional toppings and serve immediately.

Notes

Use chicken thighs for juiciness; breasts may dry out. Toast bread thoroughly to prevent sogginess. Assemble sandwiches just before eating. Chicken filling can be frozen for up to 2 months.
