Description

A creamy, spicy chicken salad that combines the flavors of jalapeño poppers with tender chicken, sharp cheddar, and a rich dressing made from cream cheese and Greek yogurt.

  • 2 boneless, skinless chicken breasts
  • Chicken broth (for poaching)
  • 2 medium jalapeños, finely diced
  • 1 cup sharp cheddar cheese, shredded
  • 4 oz cream cheese, softened
  • 1/2 cup plain, full-fat Greek yogurt
  • 1/4 cup mayonnaise
  • 3 green onions, thinly sliced
  • 1/2 cup toasted pecans or crushed buttery crackers (optional)
  • Butter lettuce or romaine lettuce (for serving)

Instructions

  1. Place chicken breasts in a pot and cover with chicken broth or water. Bring to a boil, then reduce heat and simmer for 12-15 minutes until cooked through (165°F).
  2. Remove chicken from heat and let cool completely. Shred the chicken with two forks or pulse briefly in a food processor.
  3. In a large mixing bowl, combine softened cream cheese, Greek yogurt, and mayonnaise. Use an electric hand mixer on medium speed to blend until smooth and creamy.
  4. Add finely diced jalapeños and shredded cheddar cheese to the dressing. Mix gently with a spatula until evenly distributed. Adjust heat or tang to taste if desired.
  5. Add shredded chicken and chopped green onions to the bowl. Gently fold everything together, being careful not to overmix.
  6. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld and cream cheese to firm up.
  7. Just before serving, fold in toasted nuts or crackers. Serve in butter lettuce cups, on a bed of greens, or with crackers.

Notes

Ensure cream cheese is fully softened to room temperature to avoid lumps. Wear gloves when handling jalapeños. Do not add crunchy elements (nuts/crackers) until just before serving to prevent sogginess. The salad tastes better after chilling for a few hours. Do not freeze, as the dairy-based dressing may separate.
