Description

A rich, velvety, and comforting 20-minute dinner featuring seared steak bites, cheese tortellini, and a homemade garlic butter alfredo sauce.


Ingredients

  • 1 lb sirloin or ribeye steak, cut into 1-inch cubes
  • 2 tbsp neutral oil (avocado or vegetable)
  • 4 tbsp unsalted butter
  • 46 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmigiano-Reggiano cheese
  • 1 package (9-12 oz) cheese or spinach tortellini (fresh, frozen, or dried)
  • Kosher salt and black pepper, to taste
  • Pinch of red pepper flakes (optional)
  • Fresh parsley, for garnish

Instructions

  1. Pat steak cubes dry with paper towels and season generously with salt and pepper. Toss with 1 tbsp neutral oil.
  2. Bring a large pot of salted water to a boil. Add tortellini and cook according to package directions (3-5 mins for fresh, 8-10 for dried). Drain and set aside.
  3. Heat a large skillet over medium-high heat with remaining oil. Sear steak bites in a single layer for 2-3 minutes per side until browned. Remove steak and set aside.
  4. Reduce heat to medium. Add butter to the same pan. Once melted, add minced garlic and sauté for 30-60 seconds until fragrant.
  5. Pour in heavy cream and stir. Bring to a gentle simmer and cook for 2-3 minutes to thicken slightly.
  6. Whisk in grated parmesan cheese until melted and smooth. Season with salt and pepper.
  7. Return steak bites and drained tortellini to the pan. Toss gently to coat everything in the sauce.
  8. Serve immediately, garnished with fresh parsley and extra parmesan if desired.

Notes

Ensure steak is dry before searing to achieve a good crust. Do not overcrowd the pan when searing steak. Keep sauce heat low to medium-low to prevent cream from splitting. If sauce is too thick, add a splash of pasta water. Do not freeze this dish as dairy may separate.
